Meet the Dietitian
Sue Hurd is a Registered Dietitian with over 20 years of experience in commercial food service, health and wellness arenas. She received her Bachelor's degree from Rutgers University and completed her Dietetic Internship with the Wood Company, now known as Sodexo. Susan's vast experience in food and nutrition enable her to relate the science of nutrition to the general public in an easily understandable format. Sue visits F&M twice a month, hosting a variety of health and wellness focused events or meeting with students and faculty.

Franklin & Marshall College Campus Dining offers many items prepared without gluten or nut containing ingredients on our menus. Our My Zone platform is located in the Restaurants at Ben Franklin.
Gluten tolerance varies from person to person; if you are sensitive to gluten then our recommendation is that you make your food selection from our My Zone platform. The staff is trained in proper food handling to reduce the risk of cross-contact and the food items found in this location are consistent with a gluten-free diet. Other dining stations that may offer foods free of gluten containing ingredients are not as well controlled to minimize cross-contact from preparation through to service.
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celeriac diets, or other special dietary needs. For students with nut allergies, you can rest assured that the Restaurants at Ben Franklin does not offer nuts or peanuts.

Central to this effort is providing healthy, nutritious foods. The result of this initiative is an approach that focuses on transparency of ingredients, delicious food, satisfying portions and clarity in message so that you can make Mindful choices!
Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
We strive to ensure that those with gluten-allergies and sensitivities are able to find something to eat on campus. MyZone in the Restaurants at Ben Franklin is our gluten-free meal station where everything is prepared separately to avoid gluten cross contamination. Modified gluten options are available in our retail locations located in Steinman College Center and Blue Line Cafe.
The Restaurants at Ben Franklin offers a variety of menu items that are vegetarian and vegan, including a new vegan station called Trellis. Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
The Restaurants at Ben Franklin now offers a variety of vegan options every day. Included in these options is our new station, Trellis, which is entirely vegan. Beside Trellis is also an offering of Vegan desserts made fresh by our bakery. During breakfast hours, we also offer a make your own chia bowl and congee bowl for a healthy vegan breakfast option. Our retail locations at Steinman College Center also offers vegan options on their menus, including Impossible burgers and vegan grilled cheese. Vegan options at Steinman are prepared on separate cooking equipment strictly for vegan offerings. Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
